Mango Salsa

Mmm, I’m unflatteringly close to dribbling over the keyboard just thinking about this one. For a salsa vibrant with flavours, kick and colour, this recipe is my all time favourite.

The secret to success here is real tomatoes… remember those? Earthy tomato smell, loads of flavour. Same for the coriander (which is a cinch to grow) and mint (just try and stop it growing). When these are all in season, your tastebuds can salsa 🙂

Mango Salsa

1 mango
4 real tomatoes
1 red onion
1 red chilli
Juice of 1 lime
Handful of fresh coriander
Handful of fresh mint

Well, this is a salsa so there’s no major techniques required here, just chop stuff up and mix it together. The trickiest thing to chop is probably the mango.

Remove the seeds from the chilli if you don’t like it too hot.

This salsa goes really well with duck, and I also think it goes well with some crispy fried salmon.

    I love mangoes. I’ve been enjoying making salsa verde all summer long with fresh tomatillos and plenty of cilantro.
