Coconutty Rice Pudding

As simple puddings go, this is surely one of the simplest! It’s not massively coconutty, just a little twist of something differently creamy.

Coconutty Rice Pudding

120g pudding rice
60g caster sugar
400ml tin coconut milk
800ml full fat milk
Bit of butter

Serves 4-6.

Rub a little bit of butter around an ovenproof dish just to stop stuff burning.

Put all the ingredients into the dish (yes it really is that simple!)

Put in a hot oven (190C, Aga roasting oven) for 20-30 minutes till a skin has formed.

Take it out, give it a stir, then put it back in a cool oven (140C, Aga simmering oven) for 2 – 2.5 hours until cooked.

To make this a dairy-free rice pudding, just replace the 800ml of milk with a carton of coconut cream, another tin of coconut milk and top that up to 800ml with water.
